A primary benefit of exercising with an exercise ball (Or Yoga Ball) as opposed to exercising directly on a flat surface, is that the body responds to the instability of the ball to remain balanced, engaging the core and improving posture.

Lots of uses, including in Yoga or Pilates routines. Alternatively, do what a friend of ours does.... partially fill one with water for a killer resistance training tool!
